- La Dolce Vita Social Club
We are stuck in quarantine, just like you, and we are getting bored, just like you. So we found an easy way to get some clicks or likes, just like you. And we took the occasion to use the first La Dolce Vita Oil sampler, that arrived on our desk a couple days before this shit happened. Enjoy and have fun.
* Green beans with almonds, chicory and lime *
– 3 tablespoons La Dolce Vita olive oil
– 3 chicory endivia heads
– 400gr green beans
– 40gr almonds
– 2 onions
– 3 garlic cloves
– 5cm fresh ginger
– 1 tablespoon lemongrass
– skin of 1 lime
– 2 teaspoon lime juice
– 1/2 teaspoon coriander powder
– salt & pepper
Bring a large saucepan of salted water to a boil. Blanch the chicory for 20 seconds, lift out with a slotted spoon, refresh under cold water and drain. Add the green beans to the boiling water and cook for four minutes, until cooked but still with some bite. Drain and refresh under cold water. The chicory and beans need to be dry, so pat them down with a clean tea towel.
Heat the oil in a large saute pan on a medium-high flame, then fry the almonds for one to two minutes, until golden brown. Remove from the pan with a slotted spoon and drain on a plate.
Add the onion, ginger, garlic, lemongrass powder, lime skin, pepper, coriander powder and three-quarters of a teaspoon of salt to the hot pan and fry on low-medium heat for 10 minutes, stirring every now and then, until golden brown. Discard the lime zest, then add the beans and chicory to the pan. Stir-fry for two minutes, until everything is combined and the vegetables are hot. Off the heat, stir in the almonds and lime juice, and serve.
